Description of the production process fresh lucanica: fresh lucanica from pure pork obtained with a mixture of selected meats which are minced, salted and stuffed

Maybe, maybe, maybe when we talk about fresh lucanica from Trentino we can rightly talk about the typical cured meat par excellence of this land. A true symbol of traditional gastronomy. It is an authentic delicacy based on lean pork and lard, with the latter, however, never exceeding 30 percent of the total weight of the fresh lucanica. The lean meat and the lard are minced together and mixed with salt, pepper, garlic and then stuffed into natural casings. Served fresh, it is ideal for grilling, grilling or even boiling.

But be careful not to exceed 15 minutes when you read it. Fresh lucanica is a particularly genuine product, given that it contains just the minimum of the preservatives required by law. Good and excellent for all ages, Trentino lucanica represents the right cured meat not only for savoring traditional flavors but also for inventing some particularly tasty dishes. Because fresh lucanica is basically the classic ingredient of many traditional dishes.

From dumplings to the "tonco del pontesel", up to the "smacafam". Of its own fresh lucanica can accompany various dishes, such as potato tortel for example. But it can also be combined in a dish in a very interesting way. Any practical examples? Ok, gladly. As a second course, lucanica can be served with baked potatoes. While in case you want to use it for first courses, here are two interesting variations.

On the one hand, the possibility of preparing a good dish of risotto with lucanica pasta and, on the other, the variant of gnocchi with lucanica. And in both cases we are talking about "open" dishes, that is, they can also be combined with other flavors to make the dish even tastier. For example, risotto with lunica pasta also goes well with peas, while gnocchi can be grated au gratin and made even tastier with the addition of pumpkin.
